I made these a few days ago using 2" thick center cut bone-in pork chops. You could use thinner, but check that you don't overcook them. This is one of those things that didn't look too appetizing when put together to bake, but tasted great, so....................
Ingredients:
2 tablespoons olive oil
Pork chops (I made two big ones, but whatever you want to use, boneless is fine also, cook less time and this would work for a pork tenderloin also)
4 tablespoons honey
1/2 cup water
1/4 cup low sodium soy sauce
1 small onion, chopped
1/4 tsp ground ginger (fresh would work great, but I had none)
1/8 tsp black pepper
Preheat oven to 325 degrees.
Heat oil in a skillet over medium heat and brown chops, 5 minutes on each side and transfer to a glass baking dish.
In a separate bowl, combine honey, water, soy sauce, onion, ginger and black pepper. Pour mixture over the pork chops in the baking dish.
Bake about 1 hour (less for thin ones) til the internal temp is about 150 degrees. Remove from oven and let rest about 10 minutes and serve.
