About 3-4 1/2 lbs of baby back ribs (or spare ribs trimmed of excess fat)
One medium onion sliced thin
2 cups barbecue sauce-homemade or bottled
1/2 cup honey
Cut ribs into 3-4 rib sections. Slice onion.
In a separate bowl, combine barbecue sauce and honey and mix well
Dip rib sections into barbecue mixture and place in crock pot. If using an oval crock pot, place two sections on bottom and kind of layer them Jenga style. If using a round crock pot, place one section on bottom and place another section, with ribs going the other direction on top of that and so on. Place some onion slices between the layers. Pour additional sauce on top of rib sections.
Cook on low for about 8-10 hours (or high for about 2 hours and then low for about 4. Can be kept on the "keep warm" for a while. Add salt and pepper to ribs and spoon excess sauce over them and serve. This makes very tender, "fall off the bone" ribs. Not typical barbecue on the grill style, but very tender and tasty.
