Oven Roasted Potatoes-Foodie Friday

Oven Roasted Potatoes


3 tablespoons Olive Oil
1 clove of garlic, minced
1/2 teaspoon salt
1/4 ground black pepper
1 1/2 lbs small new red potatoes, scrubbed and quartered
1 tablespoon parsley
(Optional: I also sometimes add peeled and halved carrots)

Preheat oven to 425. Mix oil, garlic, salt and pepper into a large baking pan (one big enough to hold all the potatoes). Add potatoes and toss to coat with oil and spices.

Bake until tender and browned, about 45 minutes, stirring every 15 minutes or so.

Serves 4-6

Since Fall is around the corner, I plan to get out my cooler weather recipes for the next several installments.
