Italian Potato Salad

Italian Potato Salad

2 1/2 lbs of New Red Potatoes quartered (or 5 large white potatoes, peeled and cut into chunks)
2 cloved of garlic, minced
1 jar of Roasted Red Peppers
2/3 cup of Extra Virgin Olive Oil
1/3-1/2 cup of Red Wine Vinegar
1/4 cup fresh chopped parsley
Salt and feshly ground pepper to taste

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and let cool.
Drain the roasted red peppers and cut into slices.
In a large bowl, mix together the garlic, olive oil, vinegar and parsley. Add potatoes and peppers and toss to evenly coat. Salt and pepper to taste.
Cover and refrigerate overnight, mix again well before serving.

That sounds like a nice change from "regular" potato salad. I'll have to try it. In fact, I'm pretty sure I have all the ingredients in the pantry already... Thanks for helping me cook dinner tonight! :)
