Foodie Friday-Asparagus on the Grill

I admit it, I forgot today was Friday (not that it was Friday, but that it was Foodie Friday).

I love cooking outside on the grill in the summer, but also like my veggies too. Being lazy at times, I like to find stuff I can cook on the grill while the other food is cooking and this is perfect~!

Ingredients needed:

About 3/4 pounds of fresh asparagus-trimmed
Heavy duty foil
2 ice cubes
salt and pepper to taste

Trim and wash asparagus. Take two sheets of heavy duty foil and put one on top of the other (make sure the sheets are big enough to lay the asparagus on and be able to crimp closed).

Place damp asparagus on the foil, add a few pats of butter, salt and pepper and add the two ice cubes. Tightly seal the asparagus in the foil and make sure the ends of the foil at crimped shut and folded upwards.

Place foil packet on grill, on low flame. Leave on the grill for about 8-10 minutes (make sure it is on low flame). Take the foil packet off and place on a paper plate (the bottom can get icky). Unwrap the foil (careful, lots of steam), remove asparagus and serve.

This makes a nice bright green tender crisp asparagus.

The ice cubes - what a great idea...I love veggies from the bbq but never want them to touch meat.
