Foodie Friday

Shrimp A la Me

Serves 2 good eaters.

This is a recipe I made up. I am an avid cook and am a “dumper”, which means I add stuff without true measurements. All seasonings are to taste, so feel free to add or delete ingredients.


18 Large or extra-large shrimp, peeled and deveined
1/3 cup Extra Virgin Olive Oil
½ stick butter
1 teaspoon chopped garlic (or more if ya like garlic)
1 jar (or 3 whole) roasted red peppers, sliced
Handful of sliced black olives
Glug of white wine (or cooking sherry, but remember the cooking sherry has salt added)
Sprinkling of fresh chopped parsley (or dried parsley)
Salt and black pepper to taste
Optional additions: I sometimes add chopped green olives or capers to this dish-to taste
9 ounces of cooked linguine, drained

In a skillet or large saucepan, add olive oil and butter. Heat on low til butter has melted. Add salt, pepper and garlic and stir. Cook on low just a minute or two. Add shrimp and cook til shrimp is just pink. Add peppers, olives and/or capers and cook about another minute. Add parsley and glug of wine. Stir well and heat about another minute.

Put cooked pasta into large bowl and dump shrimp mixture over it, mix well. Serve immediately.
